Hamburger Soup Instapot Ingredients
- Olive Oil: Olive oil is used to saute the onion and garlic before cooking the beef. Other vegetable oils such as canola oil or avocado oil may also be used.
- Ground Beef: I always use extra lean ground beef to help avoid excess grease. If you use fattier ground beef, you will need to drain some of the grease so the soup doesn't have too much oil. If you like, you can use a mix of pork and beef for additional flavor. Ground turkey may also be used in a pinch.
- Onion: Sweet yellow or white onion work best for this recipe. I do not recommend using red onion as the flavor is a little too strong.
- Garlic Cloves: You want to use fresh, minced garlic cloves for this recipe. You can also use a garlic press if you have one.
- Carrots: Use large, whole carrots for best results, cut into pieces. Baby carrots are more likely to become mushy.
- Potatoes: I'm using large russet potatoes cut into small pieces. Other potatoes such as red potatoes or yukon gold potatoes may be used.
- Celery: Cut the celery into small pieces. Celery is one of the primary ingredients for forming the base of any delicious soup!
- Beef Broth: Beef broth will be the base of your hamburger soup. Make sure to use broth, not stock, as the flavor is not the same. I do not recommend using other types of broth for hamburger soup.
- Bay Leaves: These enhance the overall flavor of the soup and are a great way to add depth easily.
- Worcestershire Sauce: The sharp flavor of Worcestershire sauce is a great addition to cheeseburger soup. It adds so much depth to the broth!
- Diced Tomatoes: Use canned diced tomatoes or, if you have them and would prefer to, you can also use freshly diced tomatoes.
- Tomato Paste: Has a strong, sharp tomato taste that complements the other flavors of this soup very well.
- Vegetables: You can use any vegetables you wish in this recipe. I'm using canned green beans. However, you can also use frozen green beans, or other canned vegetables such as broccoli, peas, corn, or even leafy greens like kale. It's a great way to use up leftover veggies or to sneak a serving of veggies into your kids' meals.
- Salt and Pepper: Basic salt and pepper is fine for this recipe. I use freshly cracked pepper.
- Italian Seasoning: Use your favorite Italian seasoning blend, or a blend of Italian seasoning ingredients such as dried oregano, basil, sage, rosemary, thyme, and marjoram.

- Add ground beef and cook until browned, stirring from time to time.
- Stir in chopped celery, chopped carrots, chopped potatoes, tomato paste, and can of diced diced tomatoes.

- Close the lid and make sure the valve is in the Sealing position. Turn to Manual on high pressure and set the time to 8 minutes.

Hamburger Soup Recipe FAQs
All of the ingredients for this Instant Pot beef soup are gluten-free.
Please double-check the beef broth. Some varieties may contain gluten.
Hamburger soup is a perfect make-ahead freezer meal. Store it in an airtight container. Leave about 1-2 inches of space above the soup in the container as the liquid may expand as it freezes. You can also freeze this soup in freezer bags.
Yes, you can make slow cooker hamburger soup easily! Using all the same ingredients, add everything to your slow cooker, stir to mix, then cook on high for 3 to 4 hours or on low for 6 to 8 hours, until the potatoes are nicely soft.
Ground Beef Vegetable Soup Recipe Tips
- I always use extra lean ground beef because it has less fat. This will help you to skip draining the fat. There's still a little bit of fat left, it adds flavor to the soup. If you do use fattier ground beef, you will need to drain some of the fat so the soup doesn't have too much oil.
- You can use fresh vegetables instead of canned vegetables if you prefer. Just add them in at the same time as the carrots and potatoes.

Served last nite to our ladies card group and they all gave me a thumbs up!! Please it isn't full of calories - maybe the bread we had was but not the soup. Followed the recipe with a few adjustments ---
Used Rotel instead of the regular diced tomatoes, whole can of mexicorn,
green beans & 1/2 can of peas.
I did not use salt or pepper I let the ones eating decide to salt & pepper.
Will make again! I might try frozen veggies, was afraid to try this time because I was serving to others.

Hi Debbie! We are SO glad you enjoyed it. You can definitely use frozen veggies. Thank you so much for your feedback - your changes sound delicious!
Rea says
If you don't have beef broth can you use something els or just water ? Or no?
Isabel Laessig says
You can substitute chicken broth or any other broth you may have on hand. You can use water if you have beef bouillons to add to it to create a broth.
Sandra Goodwin says
Use Better than bouillon, beef flavored. I always use frozen veggies when possible. So much better.

Em Beitel says
They are, but it's easy! Add the ingredients to your slow cooker, stir to mix, then cook on high for 3 to 4 hours or on low for 6 to 8 hours, until the potatoes are nicely soft. Thanks for your question, Dee!
SeafoamJade says
Is there something that I can use to replace the can of diced tomatoes? I'm not supposed to eat seeds, but I would still like to get the same tomato flavor (and soupy texture, too, if possible).
Em Beitel says
Hi there! Tomato sauce would also work great for taste and texture as a seedless option. Thank you so much for your question.

We have an old family recipe VERY similar to this one that we add Bean with Bacon soup to and it is a delicious addition.
Em Beitel says
That sounds incredible, Jo! Adding beans and bacon is something we'll have to try.

This was so easy and so delicious! I didn’t have any canned tomatoes, so I used half a 24 oz jar of Rao’s marinara sauce instead of the tomato paste and canned tomatoes. Yummy! Thanks so much for sharing this recipe.
