Pork Chops Mustard Sauce
If I have pork chops and Dijon mustard in the fridge, it's pretty much guaranteed what I'm going to make for dinner. Some recipes are just too easy and delicious to ignore. And knowing how often I buy pork chops and mustard... well, let's just say, I make this sauce a lot!
The impressive thing? My family devours it every single time, and I know it's all about the delicious Dijon cream sauce! Combining the complex savory flavor of Worcestershire with earthy, zesty Dijon mustard and luscious, rich heavy cream, this recipe for mustard sauce tastes like it's right out of a 5-star restaurant.
So would you believe it when I say it only has five ingredients, and takes minutes to prepare? That's right! Make this mustard sauce recipe, and I promise- you'll be whipping it up again for everything. (But especially my Pan Fried Pork Chops - it's the one-pot pork chops and mustard sauce of your dreams!)
Mustard Sauce for Pork Chops Ingredients
- Chicken stock
- Dijon mustard
- Heavy cream
- Worcestershire sauce
- Salt and pepper
This recipe is perfect for boneless or bone-in pork chops. See my favorite pork chop recipes below! Or, simply cook the pork chops in the pan before making the sauce with olive oil or butter and my pork chop seasoning.
Making Mustard Sauce for Pork
- Pour chicken stock in a large skillet over medium-high heat (If you cooked pork chops in the pan beforehand, don't clean it! Use the stock to de-glaze.). Stir until steaming, then slowly add the heavy cream, stirring continuously.
- Once well mixed, add in the Dijon mustard and Worcestershire sauce.
- Whisk well, making sure there are no clumps remaining. If using a pan with pork drippings, make sure to scrape up all the browned bits.
- Allow the sauce to simmer, thickening until it reaches your desired consistency. Then season to taste with salt and pepper, pour on to pork chops, and serve!
Pork Chop Sauce Tips
- If you're making this mustard sauce in the pan you cooked pork chops in, you may not need to add any salt and pepper. The seasonings from the pork chops will do the trick!
- If you have any pork drippings, add them to the sauce! It'll add incredible depth of flavor no stock or broth can replicate.
- This Dijon sauce is perfect for add-ins! I love to stir in sauteed onions or shallots and mushrooms, or saute garlic in the pan before making the sauce.
- If you're looking for a thicker sauce, add a teaspoon of cornstarch mixed into a splash of water.
- Feel free to make a few additions for even more flavor as you see fit! I like adding fresh thyme, a sprinkle of fresh parsley, or changing it up with a little reduced dry white wine or a squeeze of lemon juice. Spiced sherry is also delicious!
- This sauce is good over everything, not just pork chops. Serve up a side dish of asparagus and potatoes, and you have the perfect plate.
- Chicken stock is preferable to chicken broth, but if you only have broth, you can use it instead.

Pork chops are mild, juicy, and soak up sauces beautifully, making them perfect for savory and flavorful sauces. Flavoring your pork chop sauces with strong flavors such as mustard, onion, and pork drippings helps enhance the naturally mild meat.
Mustard is an excellent flavoring with pork! But be sure to use Dijon or honey mustard, not yellow mustard. Yellow mustard has a more acidic bite rather than the more rounded, complex, and earthy flavors of Dijon or a honey mustard sauce. Dijon or honey mustard pork chops make an excellent meal!
While both made from ground mustard seeds, regular mustard is made from ground up yellow and white mustard, while Dijon is made from black mustard. This gives the two types of mustard distinctly different flavor profiles and grain. Additionally, Dijon tends to be spicier.
