Instant Pot Short Ribs Stew
Cut short ribs into chunks and season with salt and pepper.
Set Instant Pot to saute mode and add olive oil once hot. Sear short ribs on all sides to brown.
Remove beef, then melt butter in the pot.
Saute onions and carrots until softened.
Add minced garlic, then tomato paste, and stir well.
Add beer and stir. Allow it to cook down for a few minutes.
Add beef stock and Worcestershire sauce.
Add red potatoes to the pot with the beef and stir well.
Add in fresh rosemary, bay leaves, and parsley. Stir well.
Replace the lid on the pot, then press the stew button or cook on high pressure for 35 minutes. Release pressure for 15 minutes.
