Eye of Round Roast

– 3 lb. eye of round roast - 4 tbsp. olive oil - 1 1/4 cups sweet and salty beef rub - 4 large sweet potatoes - 4 ears fresh corn - 1 pint grape tomatoes - 2 green onions

Ingredients

Season roast.

Preheat oven to 425 degrees. Brush roast with olive oil on all sides, and season with beef rub.

Arrange sweet potato.

Slice 4 large sweet potatoes and arrange the slices on a baking dish. Brush with olive oil.

Roasting time.

Place the roast at the center of the sweet potatoes. Roast for 20 minutes.

Combine veggies.

Combine corn and tomatoes in a baking pan and season with beef rub and olive oil. Mix well and add to oven after 20 minutes is up, lower temperature to 325 degrees.

Roast again.

Roast for 50 more minutes. Remove from oven when done and tent with foil.

Serve, and enjoy!

Let rest for 15 minutes before slicing against the grain. Serve, and enjoy!
