Grilled Sirloin Cap
picanha cut sirloin cap santa maria seasoning
Score the fat cap in a crosshatch pattern.
Season with Santa Maria seasoning.
Cut into 1" strips and fold into a "C" on metal skewers.
Grill at 400 degrees over indirect heat for 15 to 20 minutes, turning every 5 minutes.
Allow to rest 5 to 10 minutes before serving.
