Honey Sriracha Meatballs

For the meatballs – 2 lbs. ground beef – ⅓ cup onion finely chopped – 4 cloves garlic minced – 2 eggs – ¾ cup breadcrumbs – 1 tsp. salt – ½ tsp. pepper – chopped green onions for garnish – sesame seeds for garnish For the honey sriracha sauce – 4 Tbsp. sriracha sauce more or less to taste – ½ cup honey – 2 Tbsp. rice vinegar – 2 Tbsp. soy sauce – 2 cloves garlic minced

Ingredients

Make sauce.

In  a medium saucepan, whisk together 4 Tbsp. sriracha sauce, ½ cup honey, 2  Tbsp. rice vinegar, 2 Tbsp. soy sauce, and 2 minced cloves garlic.

Finish sauce.

Place pan over medium-high heat and boil, stirring occasionally. Once boiling, reduce heat to simmer. Cook for 10 min. until it thickens. Remove from heat. It will thicken more as it cools.

Mix beef.

Preheat oven to 375°F. Spray 2 baking sheets with cooking spray or line with parchment. Mix ground beef with onion, garlic, breadcrumbs, salt and pepper in a large bowl. Beat eggs and add to mixture.

Roll meatballs.

Roll into 1½ inch balls and spread evenly on baking sheet.

Bake for 20 to 25 minutes, until cooked through. Pour honey sriracha sauce over meatballs and garnish with sesame seeds and green onions

Serve

Serve as an appetizer with toothpicks, or as a meal over rice. Enjoy!
