Keto Stuffed Peppers

– bell peppers – olive oil – onion – ground beef – cauliflower rice – Italian seasoning – tomato sauce – garlic minced – shredded fontina cheese  – grated parmesan cheese – Salt and pepper – red pepper flakes – Fresh basil

Ingredients

Preheat oven to 400°F. Oil a baking dish. Halve peppers and clean out the seeds. Rub oil on the inside. Place in baking dish and sprinkle with salt and pepper. Roast for 15 minutes.

Heat a skillet over medium heat. Add olive oil and saute the onion until soft. Add in the ground beef and cook until no longer pink.

Stir in garlic and cook. Stir in the tomato sauce, cauliflower rice, Italian seasoning, salt and pepper. Sprinkle with red pepper flakes. Cook for 2 minutes.

Turn off heat and stir in half of the fontina cheese and all of the parmesan. Spoon mixture into the par-baked peppers. Top with remaining fontina.

Lower oven temperature to 350°F and bake for 25 minutes. Top with fresh basil.
