Keto Taco Bake

Our Keto Taco Casserole blends everything you love about your favorite taco recipe into an easy low carb casserole!

Keto + gluten-free! Easy to make with simple ingredients!

Ingredients

– 1 pound ground beef  – ½ onion diced – 1 pepper diced – 1 ounce package taco seasoning  – ⅓ cup water – 1 10 ounce can diced tomatoes with green chilies undrained – 1 cup cheddar cheese shredded – 4 large eggs – ½ cup milk – ½ cup sour cream – 1 avocado sliced – 1 jalapeno sliced

Cook beef.

Preheat oven to 350°F. Spray a pan with cooking spray. Cook beef in a skillet over medium heat for 10-12 minutes.

Add veggies.

Add pepper and onion and saute for 5 minutes until softened.

Season.

Add taco seasoning, diced tomatoes and green chilies, and water, and simmer over medium heat.

Add to baking dish.

Spread taco meat in the bottom of the oiled baking dish.

Whisk.

In a bowl, whisk eggs, milk, and sour cream together.

Add cheese.

Spread over the beef mixture and top with shredded cheese.

Bake.

Bake for 30 to 35 minutes. Let cool, then top with jalapenos and avocado. Serve and enjoy!
