MEXICAN GROUND BEEF CASSEROLE

Mexican Ground Beef Casserole

Layers of seasoned ground beef, corn tortillas, chiles, cheese, and corn make our Easy Mexican Ground Beef Casserole with Tortillas a winner any night of the week!

Ingredients

– 2 lbs. ground chuck cooked and drained – 1¼ oz. taco seasoning packet – ¾ cup water – 1 cup green onions chopped – 1 cup corn kernels thawed from frozen, or freshly cooked – 16 oz. salsa your choice of salsa; we use medium heat – 12 6-inch corn tortillas you can also use flour tortillas if preferred – 20 oz. hatch chiles five 4 oz. cans of diced chiles – 10 oz. enchilada sauce mild – 1 lb. Mexican blend cheese shredded – chopped green onions and fresh tomatoes for garnish

Cook beef.

Preheat oven to 350°F. Grease skillet with oil and place over medium heat on stove. When hot, add ground beef and cook until all beef is broken up and browned.

Season beef.

Combine ground beef with taco seasoning, ¾ cup water, and green onions. Stir in salsa and corn kernels.

Layer.

Spray 9 by 13-inch baking dish with non-stick spray. Layer corn tortillas along the bottom.

Add beef & cheese.

Top with ⅓ of the diced hatch chiles, ground beef mixture, Mexican cheese blend, and enchilada sauce.

Top it off.

Repeat the layers twice in that order, then top everything off with your remaining cheese.

Bake

Cover with foil and bake at 350°F for 45 minutes. Then, remove foil and bake another 10 minutes.

Serve & enjoy!

Allow casserole to sit loosely covered with foil for 10-15 minutes before serving. Top with green onions and fresh diced tomatoes. Serve and enjoy!
