– 1 thick-cut ribeye about 1½ to 2 inches thick – 1 tablespoon Santa Maria seasoning or seasoning of choice – 1 tablespoon avocado oil or canola oil – 1 tablespoon unsalted butter – Fresh rosemary optional
Preheat the oven to 275°F. Place a wire cooling rack onto a baking sheet, place ribeye onto the rack. Season both sides of the ribeye with Santa Maria seasoning.
Add to the oven and bake for 15 minutes. Add avocado oil to a cast skillet and heat over high heat until it begins to smoke. Sear for 2 minutes on one each side.
Carefully remove the ribeye from the skillet and let it rest. Top with butter and allow it to melt. If using, top with fresh rosemary.
