Preheat the oven to 375°F. Add ground beef to a large pot over medium heat. Brown for 7 minutes or until cooked through, and drain the liquid.
Add dried pasta, vegetable broth, Sloppy Joe sauce, and corn. Cook for 15 minutes, stirring occasionally.
Add Velveeta shreds to the ground beef mixture, and stir until fully incorporated. Transfer to a 9 by 13-inch baking dish.
Top with 1 cup cheddar cheese, then bake for 10 minutes, or until the pasta is tender.
Top with parsley, serve in bowls, and enjoy!
