Slow Cooker Lasagna

– 1 tbsp. olive oil – 1 lb. ground beef – 1 lb. Italian sausage – 1 medium onion finely chopped – 2 cloves garlic minced – 8 cups tomato marinara sauce – salt and pepper to taste – 32 oz. ricotta cheese – ½ cup parsley chopped, optional – 2 lbs. mozzarella cheese – 1 cup Parmesan cheese grated – 1 lb. lasagna noodles uncooked – 4 eggs – 1 tbsp. Italian seasoning


 Cook onion and garlic. Add beef and sausage and cook until browned. Stir in tomato sauce and Italian seasoning. Simmer on low.

Cover the bottom of slow cooker with meat sauce.In a bowl, combine ricotta cheese with Parmesan, parsley, eggs, and salt and pepper to taste.

Top with oven-ready lasagna noodles. Break to fit and place broken pieces where sauce is uncovered.

Ladle more meat sauce and spread evenly. Then spoon on ricotta mixture and top with mozzarella cheese plus additional Parmesan.

Repeat the layers 3 times. Cook on low for 7 hours. Set to warming mode and allow it to rest for 30 minutes before cutting into it.
