Rinse the potatoes very well, leaving the peels on. Cut each potato lengthwise in half, then lay flat and cut lengthwise again into quarters, then once more into eighths.
5 medium Russet Potatoes
Preheat the oven to 400 degrees Fahrenheit and line a baking sheet with parchment paper. While the oven is heating, soak the wedges in a bowl of cold water for 10-15 minutes, then combine the olive oil, salt, and spices (except parsley) in a large bowl.
¼ cup olive oil, 1 teaspoon paprika, 3 teaspoons garlic powder, 2 teaspoons onion powder, 2 teaspoons salt, 2 teaspoons dried rosemary, freshly ground black pepper
Drain the potatoes and pat them dry with paper towel or a large tea towel. Once dry, tip into the bowl with seasonings, and mix until all the potatoes are evenly coated. Arrange the coated potatoes cut-side-down on the baking sheet, making sure none are overlapped.
Bake for 20 minutes, then remove from the oven and flip using a spatula. Return to the oven and bake for another 10-15 minutes, until the edges are golden and crisp. Remove from the oven, sprinkle with fresh parsley, let cool for five minutes, then serve!

- Make sure to always soak your potatoes before baking them! There's nothing as disappointing as a floppy steak fry, but by soaking them first, these fries are crispy and perfect every time!
- Don't be tempted to flip the fries early! Letting them bake for a full 20-30 minutes before flipping them will assure a delicious crunchy-crispy fry.
- Getting bored of the same seasoning? Change it up with any of your favorite seasonings- the cook time will be the same!
- Try and get fresh, firm Russet potatoes for making steak fries. The better the potato, the better the consistency of the fry!
