Ingredients

  • 2 2-inch thick filet mignon steaks
  • 1 Tablespoon kosher salt
  • 1 teaspoon black pepper

Instructions

  • Salt and pepper all sides of your filets generously. Let it set for about 10 minutes.

  • Heat the grill to high heat. Once the grill is screaming hot, place the filets on the grill. Do not touch them for 5-8 minutes. Then flip them and do the same thing.

  • Once they have been on for 10-15 minutes, check the temperature. We want the internal temp to be 130°F. If the color on them looks good but it is still not up to temp, move them to a more indirect heat location on the grill or an upper rack. When ready, move to a cutting board.

  • Let the filets rest for about 10 minutes and serve.

Notes

  • The longer you let the salt set on the filets, the deeper the salt penetrates. You can salt them and put them in the fridge in open air for a few hours to really get a nice crust on the filets.
  • Basting some melted butter on the filets during the cook is a great idea. It is a very lean cut of meat, and any bit of fatty flavor you can add to it will go a long way.
  • Having a good meat thermometer is a necessity when it comes to grilling expensive cuts of meat. Make sure you have one handy as time matters less than the internal temperature does. The internal temperature should be your main focus.
  • If you need to add more salt and pepper than what is listed, don’t hesitate. Cover those filets well for the best outcome.
