Cheeseburger Pie

- Pie crust pre-made
- 1.5 lb. Ground beef
- 8 oz Cheddar cheese
- 2 cups Mashed potatoes leftover, instant, or fresh
- 3 Tablespoons Burger seasoning one recipe serving
- 1 can Diced tomatoes and green chilies
- Salt and pepper to taste
- 1 medium Tomato sliced
Burger Seasoning:
- 1 teaspoon Salt
- ½ teaspoon Pepper
- 1 Tablespoon Paprika
- 1 teaspoon Onion powder
- 2 teaspoons Garlic powder

Preheat the oven to 425°F, and place the pie crust in a deep 9-inch pie dish. Using a fork, poke holes in the bottom of the crust. Pre-bake the crust for 7 minutes.

While the crust is baking, combine the ground beef and burger seasoning in a large skillet and brown the beef.

Drain the liquid from the pan, then add the can of tomatoes and chilies. Cook for another 2 minutes and drain the liquid again.

Add the ground beef to the pie crust, then top with the prepared mashed potatoes in a smooth layer. Finish with the shredded cheese, salt, and pepper.
8 oz Cheddar cheese, 2 cups Mashed potatoes, Salt and pepper
Return the pie to the oven and cook for 10 minutes, or until the potatoes are hot and the cheese is melted and bubbly.
Remove from the oven, top with slices of tomato, and serve!

- This recipe is a perfect way to make use of leftover mashed potatoes, or you can make them fresh for the pie! In a pinch, for an ultra-fast pie, use a packet of instant mashed potatoes and 2 cups of water- just be sure to season it heavily.
- Feel free to add as many seasonings as you'd like! I highly recommend my recipe for burger seasoning, as it will add so much depth of flavor to the ground beef.
- This is a great make-ahead recipe that can be stored cold until it's ready to serve, then popped into the oven for 15-20 minutes or until heated through.
