Ingredients

  • 5 medium Russet Potatoes
  • ¼ cup olive oil
  • 1 teaspoon paprika
  • 3 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 2 teaspoons salt
  • 2 teaspoons dried rosemary (optional)
  • fresh parsley (chopped, optional)
  • freshly ground black pepper (optional)

Instructions

  • Rinse the potatoes well, leaving the peels on. Cut each potato lengthwise in half, then lay flat and cut lengthwise again into quarters, then once more into eighths (or 12ths if preferred).

  • Preheat the oven to 400°F and line a baking sheet with parchment paper. While the oven is heating, soak the wedges in a bowl of cold water for 10-15 minutes, then combine the olive oil, salt, and spices (except parsley) in a large bowl.

  • Drain the potatoes and pat them dry. Once dry, tip into the bowl with seasonings, and mix until all the potatoes are evenly coated. Arrange the coated potatoes cut-side-down on the baking sheet, making sure none are overlapped.

  • Bake for 20 minutes, then remove from the oven and flip. Return to the oven and bake for another 10-15 minutes, until the edges are golden and crisp. Remove from the oven, sprinkle with fresh parsley, let cool for five minutes, then serve!

Notes

  • Before starting the steaks, get an idea of how long the sides will take to cook. Things like fries and baked potatoes are much better fresh out of the oven and suffer from resting for too long.
  • Always consider if sides can be paired together! Mashed potatoes are delicious eaten combined with mushrooms and onions, while heartier sides like baked potatoes and macaroni are filling without needing accompaniment.
  • Many steak sides can be made ahead of time! Mashed potatoes and macaroni are especially easy to make ahead of time and pop in the oven or on the stove to reheat right before serving.
  • Keep an eye on what appliances you're using! If you're using the oven for steak, you might not want to make any baked sides.
