Skillet
Wooden spoon or spatula
- 8 ounces cremini mushrooms or white button mushrooms
- ¼ teaspoon salt and pepper
- 1 Tablespoon butter
- 2 cloves garlic minced
- 1 Tablespoon Dijon mustard
- ½ small onion
- ¼ cup Cognac or brandy, Madeira wine, or dry white wine
- 1 Tablespoon Worcestershire sauce
- ½ cup beef broth
- ¼ cup heavy whipping cream

Cooking the Mushrooms and Onions
Set the stove to medium heat and add butter to a large skillet.
1 Tablespoon butter
Once the butter has melted, add sliced mushrooms and a pinch of salt and pepper.
8 ounces cremini mushrooms, ¼ teaspoon salt and pepper
Sauté the mushrooms for 1-2 minutes, stirring often.
Then, add garlic and onions to the skillet with the sauteed mushrooms and continue to sauté for another 2-3 minutes.

Making the Cognac Sauce (Optional)
Take the skillet off the heat and add Cognac to it.
¼ cup Cognac
Once you've added the Cognac, return the skillet to the heat. Be cautious, as it might flare up!
Sauté for 1-2 minutes to let the alcohol cook off, then mix in Dijon mustard, Worcestershire sauce, and beef broth.

Stir the mixture, then pour heavy whipping cream into the skillet. Stir as you pour, and pour slowly, to keep it from curdling.

Keep stirring and let it cook for 5 minutes until the sauce becomes thicker.

If you want to make steakhouse mushrooms without the cognac sauce, simply follow the instructions to saute them with the garlic, onions, and seasoning. I also recommend adding the Worcestershire sauce for a bit of extra flavor and tenderness.
