Lightly brown the bacon in a Dutch Oven.

Brown the beef chuck roast on all sides.

Cook the carrots and onions until lightly browned.

Add the beef and bacon back to the pan with flour, and cook for 4 minutes.

Stir, then cook another 4 minutes.

Add garlic, red wine, beef stock, tomato paste, bay leaves, and thyme.

Saute the pearl onions until softened.

Brown the mushrooms.
