Instant Pot Prime Rib
– 3 lb. boneless rib roast - Sea salt and pepper - 1 cup unsalted beef stock - 1/2 cup red wine - 3 tbsp. vegetable oil - 3 tbsp. all purpose flour - Fresh herb springs
Score the fat cap of a 3-pound boneless rib roast by cutting in a cross-hatch pattern.
Generously season roast on all sides with sea salt and black pepper. Give it a good coating.
Place roast in pot.
Place trivet in Instant Pot and place roast on top. Add beef stock and red wine to pot. Add in a few springs of fresh herbs.
Close lid and pressure cook on low for 5 minutes. Once time is up, allow to natural release for 30 minutes.
Remove roast from the pot and strain the liquids from the pot into a cup. Set aside.
Set Instant Pot to sauté, and add in vegetable oil. Sear roast on all sides until browned.
Let roast rest.
Remove roast once browned and tent with foil for 15 minutes before carving.
Add the strained liquids back into the pot along with all purpose flour. Stir well until thickened.
