Set oven to 350°F. Grease a skillet with oil. When hot, add beef and cook until browned.
Combine beef taco seasoning, water, and chopped green onions. Stir in salsa and corn.
Grease a baking tray and layer corn tortillas along the bottom.
Top with hatch chiles, ground beef mixture, Mexican cheese blend, and enchilada sauce.
Repeat the layers twice, then top everything off with your remaining cheese.
Cover with foil and bake for 45 minutes. Then, remove foil and bake another 10 minutes.
Top with green onions and fresh diced tomatoes. Serve and enjoy!
