Mexican Ground Beef Casserole
I just love Mexican recipes with ground beef. They make for easy and tasty weeknight meals my family enjoys. This Mexican corn casserole recipe is one of my favorite dinners to make of all time.
It's easy to make in a pinch, budget-friendly, and uses simple ingredients, like beef prepared with taco seasoning and corn. It's deeply flavorful and perfect for meal planning. This easy Mexican casserole recipe is a fun way to spice up your taco night!

Mexican Beef Casserole Ingredients
- ground beef 80/20 blend cooked and drained - How to Defrost Ground Beef
- taco seasoning packet
- water
- green onions chopped
- corn kernels thawed from frozen, or freshly cooked
- salsa your choice of salsa; I use medium heat
- corn tortillas you can also use flour tortillas if preferred
- hatch chiles
- enchilada sauce
- Mexican blend cheese shredded
- chopped green onions and fresh tomatoes for garnish (optional)
Ground Beef Mexican Casserole Recipe
- Preheat oven to 350°F. Grease a skillet with cooking oil and place over medium heat on the stove. When hot, ground beef and cook until all beef is broken up and browned.
- Combine ground beef taco seasoning, water, and chopped green onions. Stir in salsa and corn kernels.
- Spray a 9x13-inch baking dish with non-stick spray. Layer corn tortillas along the bottom.
- Top with ⅓ of the diced hatch chiles, ground beef mixture, Mexican cheese blend, and enchilada sauce.
- Repeat the layers twice in that order, then top everything off with your remaining cheese.
- Cover with foil and bake at 350°F for 45 minutes. Then, remove the foil and bake for another 10 minutes.
- Allow Mexican ground beef casserole to sit loosely covered with foil for 10-15 minutes before serving.
- Top with green onions and fresh diced tomatoes. Serve and enjoy!
Gluten-Free Mexican Casserole Instructions
It's easy to keep this taco bake with tortillas gluten-free - just double-check your ingredients!
- Use gluten-free taco seasoning (for example, McCormick brand).
- Stick to corn tortillas; they naturally contain no gluten.
- Make sure you're using gluten-free enchilada sauce (Old El Paso brand works).

- 18 6-inch corn tortillas you can also use flour tortillas if preferred
- 20 oz. hatch chiles five 4 oz. cans of diced chiles
- 10 oz. enchilada sauce mild
- 1 lb. Mexican blend cheese shredded
- chopped green onions and fresh tomatoes for garnish

Doesn't make sense to me... you say to repeat the layers twice, but only call for 12 corn tortillas. Shouldn't it be 18 tortillas?

You should only need 12 tortillas as the top layer isn't covered by tortillas! I hope this helps. Thank you!

My apologies, but I'm still confused. Three layers would equal 18 tortillas or are you combining the second layer with the last.

Maybe it means make 2 layers optional but I'd add black beans in meat and corn mixture and also I'd serve with sour cream and avocado
