Preheat oven to 425°F. Brush roast with oil, then season with beef rub.
Arrange sliced sweet potatoes on a baking dish. Brush with oil.
Place roast at the center. Roast for 20 minutes at 425°F.
Combine corn and tomatoes in a pan and add remaining seasoning along with oil.
Mix and add to the oven after the initial 20 minutes is up. Lower the oven temperature to 325°F.
Roast for 50 more minutes. Let rest and slice against the grain. Serve, and enjoy!
