Pat roast dry. Season with salt and pepper. Preheat oven to 450°F.
Rest fat-side up on a pan with a roasting rack. Place in the oven for 15 minutes.
Lower oven to 325°F and tent the roast with foil. Cook for 1 hour and 40 minutes.
Remove from oven and allow it to rest. Carve against the grain and enjoy!
