Italian Wedding Soup

– mini meatballs – olive oil – small onion  – Parmesan cheese – eggs – garlic minced – chopped spinach – chicken broth – orzo pasta – salt and pepper

Step 1

Set Instant Pot to saute and add oil. Once hot, add onion and cook. Add garlic and cook for 2-3 minutes

Step 2

 Pour in chicken broth. Cover with the lid, and let the soup come to a boil, 5-10 minutes.

Step 3

Squeeze the water out from chopped spinach. We do this by pressing it through a colander over a bowl.

Step 4

Add the spinach to a bowl with eggs and mix together. Then, add Parmesan and stir.

Step 5

Once boiling, drop forkfuls of the spinach mixture into the broth. Give it a stir, then add in orzo pasta. Cook on high for 3 minutes

Step 6

 Carefully release pressure, then stir and add in 30 cooked meatballs.

Step 7

Season with salt and pepper, serve, and enjoy!
