Mexican Ground Beef Casserole

– 2 lbs. ground chuck - 1 1/4 oz. taco seasoning - 3/4 cup water - 1 cup green onions - 1 cup corn kernels - 16 oz. salsa - 12 6-inch corn tortillas - 20 oz. hatch chiles - 10 oz. enchilada sauce - 1 lb. Mexican blend cheese

Ingredients

Cook beef.

Preheat oven to 350 degrees. Cook ground beef until broken up and browned.

Make meat mixture.

Combine ground beef with taco seasoning, water, and chopped green onions. Stir in salsa and add corn kernels.

Add corn tortillas.

Spray a 9 by 13-inch baking dish with non-stick spray. Layer corn tortillas along the bottom.

Start layering.

Top with 1/3 of the diced hatch chiles, ground beef mixture, Mexican cheese blend, and enchilada sauce.

Repeat layers.

Repeat the layers twice in that order, then top everything off with your remaining cheese.

Bake.

Cover with foil and bake at 350 degrees for 45 minutes. Then, remove foil and bake another 10 minutes.

Serve and enjoy.

Allow casserole to sit loosely covered with foil for 10 minutes before serving. Top with green onions and fresh diced tomatoes. Serve and enjoy!
