Instant Pot Short Rib Stew

2 Tablespoons olive oil – 2 pounds short ribs  – 2 Tablespoons butter – 3 cloves garlic minced – 2 onions diced – 3 carrots peeled and cut into bite size pieces – 2 Tablespoons tomato paste – 5-6 red potatoes cubed

– 24 ounces dark beer 2 bottles; or red wine – 2 cups beef stock – 1 Tablespoon Worcestershire sauce – 2 sprigs fresh rosemary – 2 bay leaves – 1 teaspoon fresh parsley chopped – Salt and pepper to taste

Cut ribs into  pieces and season with salt and pepper. Wash potatoes and cut into pieces. Mince garlic and dice the onions. Finally, wash, peel, and cut carrots.

Set Instant Pot to sauté mode. Once hot add in oil and ribs. Cook ribs in two batches. Sear for a few minutes on all sides to brown.

Once seared, remove short ribs. Add butter to Instant Pot; once melted, sauté onions and carrots until softened.

Next, add in garlic and sauté for a few minutes. Then, add in tomato paste and stir well.

Add in beer and cook down for a few minutes. Then, add Worcestershire sauce, fresh rosemary, bay leaves, and parsley. Stir well and add potatoes.

Place ribs back into the pot and add the lid. Press the 'stew'  button and cook on high pressure for 35 minutes. Let natural release for 15 minutes. Serve and enjoy!
