My family and I border on obsessed with short ribs recipes. What could be better than delicious, fall-apart tender, braised ribs? I make them all of the time in the oven or slow cooker - we just can't get enough!
But the thing about most braised beef recipes is that they take all day to cook... unless you're using a pressure cooker! And let me tell you if you think you can't have a tender boneless short ribs recipe using the Instant Pot, you can.

Instant Pot Short Rib Stew Ingredients
- olive oil
- boneless short ribs cut into 1½-inch pieces
- butter
- garlic
- onions diced
- carrots peeled and cut into bite-size pieces
- tomato paste
- red potatoes cubed
- dark beer; or red wine, if preferred
- beef stock
- Worcestershire sauce
- Rosemary
- bay leaves
- fresh parsley chopped
- Salt and pepper to taste

How to Cook Short Ribs in the Instant Pot
- Cut short ribs into 1½-inch pieces and season with salt and pepper.
- Wash potatoes and cut them into bite-size pieces.
- Mince garlic cloves and dice the onions.
- Finally, wash, peel, and cut carrots.
- Set Instant Pot to sauté mode. Once hot add olive oil and short ribs. Cook short ribs in two batches, don't overcrowd the pot. Sear for a few minutes on all sides to brown.
- Once seared, remove the short ribs to a plate. Add butter to Instant Pot and once melted sauté onions and carrots for a few minutes until softened.
- Next, add in minced garlic and sauté for a few minutes. Then, add tomato paste and stir well.
- Add in 2 bottles of beer and stir well. Cook down for a few minutes, then add Beef stock, Worcestershire sauce, fresh rosemary, bay leaves, and parsley. Stir well. Finally, add red potatoes to the pot and stir again.
- Place your short ribs back into the pot and add the lid. Press the 'stew' or 'pressure cook' button and cook on high pressure for 35 minutes. Once done, let natural release for 15 minutes. Serve and enjoy!
Instant Pot Short Rib Stew Tips
- Wait until the Instant Pot is hot before searing the beef so it sears well.
- When searing the beef, cook it in two batches. Don't overcrowd the pot, or the beef won't sear properly.
- After cooking, remove the bay leaves from the stew.
- You can serve this recipe as a stew or over mashed potatoes.
Short Ribs Recipes FAQs
Yes! Increase the pressure cooking time by 1-2 minutes if using bone-in ribs.
You can use beef broth or even mushroom stock if you prefer not to use beer for braising. You can also use red wine.
Flanken and English-style are the two different types of short ribs cuts. Flanken refers to ribs located along the back towards the belly, cut across the bones. They're cut into ½-inch lengths and are sometimes left in a strip. English-style short ribs are cut between each rib to separate them.

- 2 pounds boneless short ribs cut into 1½-inch pieces
- 2 Tablespoons butter

Sounds delicious...making in a few days. I would like to make with red wine instead of beer. How much wine should I use?
