Slow Cooker Vegetable Beef Stew

– 1 lbs. stew beef – 2 cloves garlic  – 2 bay leaves – 1 shallot  – 2 Tbsp. tomato paste – 2 cups beef broth – 1 zucchini  – 1 summer squash  – 1 yellow bell pepper  – 1 red bell pepper  – salt and pepper  – Parmesan cheese 

Whisk together beef broth, tomato paste, garlic, shallot, and salt and pepper to taste.

Pour half of the broth mixture into the bottom of the slow cooker, then add your stew meat.

Pour the remaining half of the broth mixture over the meat and add the bay leaves.

Cook on low for 6-8 hours. Add vegetables in the last 30 minutes of cooking time. Remove the bay leaves before serving.

Garnish  with basil and cheese and then serve!
