Beef chuck short ribs
Salt and pepper
Onion
Celery
Carrots
Vegetable oil
Garlic
Red wine
Balsamic vinegar
Tomato paste
Beef broth
Dried rosemary
Bay leaves
Pat ribs dry. Sprinkle all over with salt and pepper. Coat them well.

Warm oil and sear the ribs on all sides. Transfer the ribs to the slow cooker.

Warm oil in a pan, then add the vegetables. Add in wine to deglaze it.

Cook for 2 minutes, then garlic and cook for 1 minute more.

Add all remaining ingredients to the pan. Allow to simmer, then pour into the slow cooker.

Turn slow cooker to low and cook for 6 to 8 hours. Discard bay leaves, serve and enjoy!
