Best Puerto Rican Empanadas

How to Cook

Every bite of these beef empanadillas is bursting with flavor. Perfect for lunch, dinner, or a snack!

Ingredients

Empanada Dough all purpose flour butter egg beaten water salt

Ingredients

Empanada Filling ground beef potato Goya Sofrito tomato sauce Goya Sazón con Azafran Spanish olives water salt Monterey Jack cheese

Add all of the dough ingredients to a food processor. Pulse until it resembles coarse crumbs. Wrap in a ball in plastic wrap and refrigerate.

Flour a surface and roll out the dough. Run a knife along the edges of a bowl until you have cut a round disc.

Heat a skillet to medium and add beef. Cook completely. Add the potato, sofrito, and water to the pan.

Cook for 10 minutes, stirring often. Add tomato sauce, Sazon con Azafron seasoning, water, and salt. Cook for 5 minutes. Toss in olives and stir.

Preheat oven to 350 degrees. Line a baking sheet with parchment. Spoon the meat filling into a pastry round. Top with Monterey Jack cheese.

Pull one side of the pastry over the other and press the edges together. Seal tightly and crimp them together with a fork.

Spray the baking sheet with cooking spray. Place empanadas on the sheet. Bake for 25-30 minutes. Serve, and enjoy!
