One of my favorite things about making taco soup is that it's ready in one pot, too, so there's hardly any clean-up after!
In a large pot, sauté onions with a small amount of cooking oil translucent.
Add garlic and sauté until fragrant; then, add ground beef and use a spatula to break into small pieces.
Add taco seasoning and cook meat until browned.
Add beans, corn, dice tomatoes, cilantro and bay leaf and stir.
Add chicken broth and cook for additional 20 minutes. Season with salt and pepper to taste.
Remove bay leaf before serving. Dish into bowls and top with your favorite taco toppings. Enjoy!
