My homemade beef taco soup recipe is a go-to meal for my household, and if your family loves taco night half as much as mine, you will want to try this dish. It's so easy to make, super tasty, and totally customizable!
Taco soup combines everything you love in a beef taco recipe into a chili-like soup I guarantee you will love. The best part about this easy beef soup recipe is that it's ready in 30 minutes or less, so you can have dinner on the table in no time.
One of my favorite things about making taco soup is that it's ready in one pot, too, so there's hardly any clean-up after. And, it's great for parties! I've brought this soup to potlucks and everyone always loves it.

Beef Taco Soup Ingredients
- Ground Beef: I recommend using 80/20 ground beef or leaner. Ground turkey will work if you're out of beef.
- Onion: Use white onion or sweet yellow onion for the best flavor. Red onion can be used if it's what you have on hand, but I highly recommend a sweeter variety.
- Garlic: Fresh minced garlic is best for this recipe. If you don't have a garlic press, I recommend getting one!
- Taco Seasoning: You can buy a packet of your favorite taco seasoning or use my homemade taco seasoning, which calls for the following spices: chili powder, garlic powder, dried onion, black pepper, paprika, and salt.
- Pinto Beans: Cannellini, black beans, kidney beans, or great northern beans make good substitutes for pinto.
- Corn: You can use canned corn, frozen corn, or even leftover corn if you prefer. I love grilling corn on the cob and using the leftover shaved kernels for this soup.
- Fire-Roasted Diced Tomatoes: If you don't have fire-roasted diced tomatoes but do have a can of regular diced tomatoes, feel free to use those instead. If you use regular tomatoes and want to add a kick to your soup, try a little smoked paprika. Alternatively, you can use diced tomatoes with green chiles.
- Bay Leaves: These add extra depth to the flavor of the soup. If you don't have them you can leave them out and it will still taste great, but I recommend using them.
- Chicken Broth: You can also use beef broth or vegetable broth.
- Cilantro (Optional): I love cilantro, but not everyone in my family does! If you're the same, you can leave it out or replace it with flat leaf parsley.
- Salt and Pepper: I recommend sea salt flakes and freshly cracked black pepper. Kosher salt is second best!

How to Make Taco Soup
- In a large pot, sauté onions with a small amount of cooking oil translucent.
- Add garlic and sauté for a minute until fragrant. Then, add ground beef and use a spatula to break into small pieces.
- Add taco seasoning and cook meat until browned.
- Add beans, corn, dice tomatoes, cilantro and bay leaf and stir.
- Add in chicken broth and cook for additional 20 minutes. Season with salt and pepper to taste.
- Remove bay leaf before serving. Dish out soup into bowls and top with your favorite taco toppings. Enjoy!

- Sour Cream: A dollop of sour cream or unsweetened Greek yogurt makes a great addition to the taste of this taco soup recipe and adds additional creaminess!
- Avocado Slices: Add sliced avocado for a pop of fresh flavor.
- Shredded or Crumbled Cheese: Use a Mexican cheese blend, crumbled cotija cheese, queso fresco, shredded cheddar, or a shredded Jack cheese such as Pepper Jack.
- Tortilla Chips: My family loves either dipping tortilla chips in the soup or crumbling them on top for crunch. Give it a try!

- Although the soup is delicious after cooking for only 30 minutes, this is one of those soups that taste better the longer it sits, which makes it great for leftovers! Leave it in the fridge overnight for great flavor the next day.
- You can make it spicier but using spicy taco seasoning, or by adding diced chiles, ancho chiles, or jalapenos.
- This soup is great because you can add extra veggies you have on hand, and it will add to the texture and flavor. Some of my favorites to add in are zucchini and bell peppers!

Homemade taco soup from scratch takes 30 minutes to cook from start to finish, including only 5 minutes of prep. Simply cook the ground beef and veggies, add other ingredients and broth, and allow it to cook further on the stove.
Leftover taco soup lasts 3-4 days when stored in the refrigerator in an airtight container. Alternatively, you can freeze it. See below.
You can freeze taco soup for 4-6 months by storing it in a freezer-safe bag after cooling. Reheat on the stove by allowing the soup to reach a simmer for 20 minutes or until heated through.
