This is the perfect way to use up your prime rib leftovers from the holidays! It's so easy and delicious!
leftover roasted prime rib olive oil butter heavy cream penne pasta onion garlic cremini mushrooms sun-dried tomatoes salt and pepper parsley grated parmesan
Heat oil in a skillet. Add onion and cook then add garlic. Next, add mushrooms and butter and cook until tender.
Add heavy cream, lowering the heat. Let it simmer for 5 minutes.
Mix in sun-dried tomatoes, salt and pepper, and parsley. Stir, then remove from the heat.
Add cooked pasta to the sauce along with leftover sliced prime rib. Mix, serve and enjoy!
