Leftover prime rib pasta
My creamy penne pasta is one of my favorite ways to use up holiday leftovers!
leftover roasted prime rib extra virgin olive oil butter heavy cream penne pasta onion garlic cloves cremini mushrooms sun-dried tomatoes sea salt and pepper fresh parsley grated parmesan
It's ready in less than 30 minutes, and beyond flavorful!
Heat oil and add onion and cook, then add garlic and cook. Next, add mushrooms and butter and cook until tender.
Add heavy cream, lowering the heat. Let it simmer for 5 minutes until the sauce reduces.
Mix in sun-dried tomatoes, salt and pepper, and parsley. Stir, then remove from heat.
Add cooked pasta and leftover sliced prime rib and return to the heat and mix. Serve and enjoy!
