Mustard Sauce for Pork Chops

Ingredients

  • cup Chicken stock
  • 1 Tablespoon Dijon mustard
  • 1 cup Heavy cream
  • ¼ teaspoon Worcestershire sauce
  • Salt and pepper to taste

Instructions

  • Pour chicken stock in a pan (If you cooked pork chops in the pan beforehand, don't clean it! Use the stock to de-glaze.). Stir until steaming, then slowly add the heavy cream, stirring continuously.
    1½ cup Chicken stock, 1 cup Heavy cream
  • Once well mixed, add in the Dijon mustard and Worcestershire sauce.
    1 Tablespoon Dijon mustard, ¼ teaspoon Worcestershire sauce
  • Whisk well, making sure there are no clumps remaining. (If using a pan with pork drippings, make sure to scrape up all the browned bits.)
  • Allow the sauce to simmer, thickening until it reaches your desired consistency. Then season to taste with salt and pepper, pour on to pork chops, and serve!

Notes

  • If you're making this mustard sauce in the pan you cooked pork chops in, you may not need to add any salt and pepper. The seasonings from the pork chops will do the trick!
  • If you have any pork drippings, add them to the sauce! It'll add incredible depth of flavor no stock or broth can replicate.
  • This Dijon sauce is perfect for add-ins! I love to stir in sauteed onions and mushrooms.
  • If you're looking for a thicker sauce, add a teaspoon of cornstarch mixed into a splash of water.
  • Feel free to make a few additions for even more flavor as you see fit! I like adding fresh thyme, or changing it up with a little reduced white wine. Spiced sherry is also delicious!
