Best Pot roast in the  instant pot

How to Cook

This roast is tender, juicy, and large enough to feed a hungry family, all in just over 1 hour!

Ingredients

boneless chuck roast  vegetable oil garlic onion red wine beef broth tomato sauce salt and pepper fresh thyme fresh rosemary rosemary cornstarch

Cut roast in half. Season with salt. Set Instant Pot to saute mode and add oil

Step 1

Add one half of the roast. Sear both sides for 4 minutes. Remove, set aside, and repeat with the other.

Step 2

Add more oil along with garlic and onion. Saute for 3 minutes. Then, add wine. Saute for another 5 minutes.

Step 3

Return both halves of the roast to the pot along with broth, tomato sauce, rosemary, thyme, and salt and pepper.

Step 4

Stir together. Add the lid and set the timer for 60 minutes. Then, let it naturally release for 20 minutes. Remove meat and set aside.

 Combine corn starch to broth and stir. Slowly add the cornstarch slurry to the Instant Pot and stir until the it thickens. 

Step 6

Pour the sauce into a serving dish to use as a gravy over your roast. Serve and enjoy!
