Prime rib pasta is the perfect way to use up your leftover prime rib from the holidays!
Heat oil in a skillet. Add onion, cook, then add garlic. Next, add mushrooms and butter. Cook until tender.
Add heavy cream, lowering the heat. Let it simmer for 5 minutes.
Mix in sun-dried tomatoes, salt and pepper, and parsley. Stir, then remove from the heat.
Add cooked pasta to the sauce, along with leftover sliced prime rib. Mix, serve, and enjoy!
