  • 1 lb ground beef
  • 1 large onion chopped
  • 2 cloves garlic chopped
  • 2 Tablespoons of taco seasoning
  • 1 can of pinto beans
  • 1 can of corn
  • 1 can of fire-roasted diced tomatoes
  • 1-2 bay leaves
  • 16 oz of chicken broth
  • 2 Tablespoons fresh cilantro chopped (optional)
  • Salt and pepper to taste

Instructions

  • In a large pot, sauté onions with a small amount of cooking oil until translucent.

  • Add garlic and sauté for a minute until fragrant. Then add the ground beef and use a spatula to break into small pieces.

  • Add taco seasoning and a splash of water, and cook meat until browned and the water evaporated.

  • Add beans, corn, dice tomatoes, cilantro and bay leaf and stir.

  • Add in chicken broth and cook for additional 20 minutes. Season with salt and pepper to taste.

  • Remove bay leaf before serving.
    Dish out soup into bowls and top with your favorite taco toppings. Enjoy!

Notes

  • Tuesdays can be busy days, so pick your recipes accordingly! Too busy to cook? Try out prepping Empanadas ahead of time to bake later, or set up a big casserole the day before!
  • If you're making classic tacos for Taco Tuesday, set everyone's favorite toppings out in separate bowls. That way, everyone can choose their own toppings in a taco bar!
  • For an even easier taco night, prep everything ahead of time: chop veggies, mix sauces, and even make your taco beef days before. Then, when taco night comes along, all you have to do is assemble it all!
