- 1 lb ground beef
- 1 large onion chopped
- 2 cloves garlic chopped
- 2 Tablespoons of taco seasoning
- 1 can of pinto beans
- 1 can of corn
- 1 can of fire-roasted diced tomatoes
- 1-2 bay leaves
- 16 oz of chicken broth
- 2 Tablespoons fresh cilantro chopped (optional)
- Salt and pepper to taste

In a large pot, sauté onions with a small amount of cooking oil until translucent.

Add garlic and sauté for a minute until fragrant. Then add the ground beef and use a spatula to break into small pieces.

Add taco seasoning and a splash of water, and cook meat until browned and the water evaporated.

Add beans, corn, dice tomatoes, cilantro and bay leaf and stir.

Add in chicken broth and cook for additional 20 minutes. Season with salt and pepper to taste.

Remove bay leaf before serving. Dish out soup into bowls and top with your favorite taco toppings. Enjoy!
