- 3 pounds bone-in pork rib roast, frenched ask your butcher to French your rib roast for you
- 3 medium sweet potatoes cut into 1-inch cubes
- ¼ cup maple syrup
- ½ stick butter melted
Pork Rib Roast Seasoning
- ½ stick butter
- 2 teaspoons Italian seasoning
- 1 tablespoon garlic powder
- ½ teaspoon dried thyme
- ½ teaspoon black pepper
- ½ teaspoon salt

One hour before cooking, pull your pork roast from the refrigerator. Preheat the oven to 500°F. In a small bowl combine ingredients for a pork rib roast seasoning.
3 pounds bone-in pork rib roast, frenched, ½ stick butter, 2 teaspoons Italian seasoning, 1 tablespoon garlic powder, ½ teaspoon dried thyme, ½ teaspoon black pepper, ½ teaspoon salt
Using a paper towel, pat the pork roast dry and rub pork roast evenly with seasoning on all sides.
3 medium sweet potatoes
Spray a roasting pan with nonstick spray and carefully place the pork roast into the pan, and add in sweet potatoes.
Roast pork for 10 minutes at 500°F. Remove roast from the oven and reduce oven temperature to 325°F.
In a small bowl combine melted butter and maple syrup. Carefully brush the maple syrup mixture all over the pork roast.

Place the pork back in the oven at 325°F for 30 minutes, or until the thickest part of the pork reaches an internal temperature of 155 degrees.
Transfer the pork to a carving board and let rest for about 10 minutes.
After resting, cut between the ribs, transfer to plates, serve and enjoy!
- When dealing with a pork roast, I always like to have a meat thermometer on hand to achieve the desired temperature without any worry.
- Roast your pork roast fat side up, this helps add extra flavor as the juices run through the roast, instead of inside the pan.
- Allow your pork rib roast to rest for 10 minutes after being removed from the oven. This locks in as much moisture and juice as possible.
