Kielbasa and Potatoes

  • 1.5 lbs. Kielbasa sausage or smoked sausage, cut to short lengths
  • 1 Tablespoon olive oil
  • 1 cup water
  • 1.5 lbs. baby potatoes whole
  • 1 large onion sliced thinly
  • cup frozen peas
  • 1 Tablespoon salt to taste; Kielbasa is salty, so taste before adding more salt
  • 1 Tablespoon pepper to taste
  • 1 Tablespoon red pepper flakes optional; skip out on the black pepper if adding this!

Instructions

  • Heat 1 Tablespoon olive oil in a Dutch Oven or large pot with a lid over medium heat on the stove.

  • Cut 1.5 lbs. Kielbasa sausage into pieces and add it to the pot.

  • Cook until the sausage begins to brown and caramelize.
  • Add 1 cup water to the pot along with 1.5 lbs. baby potatoes. Stir, scraping up any browned bits from the bottom of the pan into the water.

  • Slice 1 large onion and pile it on top of the other ingredients in the pot.

  • Close the lid and turn the heat down to medium-low. Cook for 40-45 minutes, or until the potatoes can be pierced easily with a fork. You may need to add more water; see tips below.
  • When the potatoes are ready, add in ⅔ cup frozen peas. Cook a few more minutes until the peas are cooked through.

  • Season with 1 Tablespoon salt and 1 Tablespoon pepper, adjusting to taste, serve, and enjoy! Keep in mind Kielbasa can be salty - taste test before adding the salt.

Notes

  • When cooking the potatoes, you may need to add more water. Check the pot occasionally to see if more should be added. Peeled potatoes will cook more quickly and also absorb more water.
  • Kielbasa is typically salty, so taste the dish before adding more salt at the end.
  • Italian smoked sausage may also be used, but the size and flavor of kielbasa make it a great choice for a main course dish.
  • A little fresh parsley added to this dish goes a long way! Try adding a sprinkle of fresh parsley for extra color and flavor.
