Amazing Taco Soup Recipe

Ingredients

  • 1 lb ground beef
  • 1 large onion chopped
  • 2 cloves garlic chopped
  • 2 tbs of taco seasoning
  • 1 can of pinto beans
  • 1 can of corn
  • 1 can of fire-roasted diced tomatoes
  • 1-2 bay leaves
  • 16 oz of chicken broth
  • 2 Tbs fresh cilantro chopped (optional)
  • Salt and pepper to taste

Instructions

  • In a large pot, sauté onions with a small amount of cooking oil translucent.

  • Add garlic and sauté for a minute until fragrant; then, add ground beef and use a spatula to break into small pieces.

  • Add taco seasoning and cook meat until browned.

  • Add beans, corn, dice tomatoes, cilantro and bay leaf and stir.

  • Add in chicken broth and cook for additional 20 minutes. Season with salt and pepper to taste.

  • Remove bay leaf before serving.
    Dish out soup into bowls and top with your favorite taco toppings. Enjoy!

Notes

  • Although the soup is delicious after cooking for only 30 minutes, this is one of those soups that taste better the longer it sits. Which makes it great for leftovers!
  • You can make it spicier but using spicy taco seasoning, or by adding diced chiles, ancho chiles, or jalapenos.
