- 1 lb ground beef
- 1 large onion chopped
- 2 cloves garlic chopped
- 2 tbs of taco seasoning
- 1 can of pinto beans
- 1 can of corn
- 1 can of fire-roasted diced tomatoes
- 1-2 bay leaves
- 16 oz of chicken broth
- 2 Tbs fresh cilantro chopped (optional)
- Salt and pepper to taste

In a large pot, sauté onions with a small amount of cooking oil translucent.
1 large onion chopped
Add garlic and sauté for a minute until fragrant; then, add ground beef and use a spatula to break into small pieces.

Add taco seasoning and cook meat until browned.

Add beans, corn, dice tomatoes, cilantro and bay leaf and stir.

Add in chicken broth and cook for additional 20 minutes. Season with salt and pepper to taste.

Remove bay leaf before serving. Dish out soup into bowls and top with your favorite taco toppings. Enjoy!
- Although the soup is delicious after cooking for only 30 minutes, this is one of those soups that taste better the longer it sits. Which makes it great for leftovers!
- You can make it spicier but using spicy taco seasoning, or by adding diced chiles, ancho chiles, or jalapenos.
