Thick-cut ribeye Santa Maria seasoning Avocado or canola oil Unsalted butter Fresh rosemary

Preheat oven and place steak on a baking sheet with a wire rack. Season well.

Add to the oven and bake to 90°F. Then, add to the stove over high heat and sear 2 minutes each side.

Move steak to a plate and let it rest 10 minutes before slicing against the grain.
