Pat your roast dry with paper towels. Season your with sea salt and black pepper. Preheat your oven to 450°F.
Place fat-side up on a pan with a roasting rack. Cook for 15 mins in the oven.
Reduce the oven temp to 325°F and tent with foil. Cook for an additional 1 hour and 40 minutes.
Remove from oven and allow it to rest. After resting, carve against the grain for best results. Serve, and enjoy!
