You will need...

boneless beef rib roast Sea salt Black pepper unsalted beef stock red wine vegetable oil all-purpose flour Fresh thyme

Made in the instant pot, it's ready in under an hour!

Flour Bowl

Score the fat cap of a beef rib roast by cutting in a cross-hatch pattern.

Season with sea salt and ground black pepper. Give it a good coating.

Place the trivet in the Instant Pot, then place the roast on top of the trivet. Add beef stock and red wine.

Lock lid in place and put vent in "sealing" position. Choose the manual setting, low pressure, and set the time for 5 minutes.

Leave roast in the pot for 30 more minutes. The Instant Pot will automatically switch to the "keep warm" setting.

 Insert a meat thermometer at the thickest part of the rib. It  should read 115°F.

Remove roast to a plate and strain the liquids from the pot into a cup. Set aside.

Remove trivet from the pot. Select the highest saute setting. Add oil and place the roast back into the pot. Sear on all sides.

Check the temperature to make sure it's cooked to your desired degree of doneness.

To make the gravy, add strained liquids back to the pot along with all-purpose flour. Stir.

Slice and top with gravy. Enjoy!
