Short Ribs on the Grill
Grilling beef is a regular occurrence at my house. If I could get away with cooking on the grill every day, I just might! My family and I are a little bit obsessed with these sweet and spicy beef short ribs on the grill.
Try them just once, and you'll know why: they are so tender and juicy, and the flavor is out of this world!
What really sets this BBQ short ribs recipe apart is that it uses super simple ingredients: boneless beef short ribs, a sweet and spicy steak rub you can make at home in minutes using common spices, and butter.
Not to mention, grilling beef short ribs takes less than 20 minutes. What could be better than an easy steak dinner that's ready in no time? I especially love to make grilled prime rib for our Holiday dinners.
Grilled Beef Short Ribs Ingredients
- boneless beef short ribs
- paprika
- onion powder
- garlic powder
- sea salt
- crushed red pepper
- black pepper
- brown sugar

For these beef short ribs on the grill, I use a sweet and spicy Steak Dry Rub that is out of this world delicious. Another favorite rub is my Beef Rib Rub.
Simple salt and pepper seasoning also work well for this short ribs grill recipe.
Grilling Short Ribs
- Season boneless beef short ribs with sweet and spicy dry rub. Or use salt and pepper to use as the seasoning.
- Pat the seasoning down to form a nice crust around the beef.
- Grill over medium-high heat for 10 minutes, flipping them halfway through.
- Use a meat thermometer to determine the desired temperature.
- Allow to rest for at least 10 minutes after removing from the grill.
- Melt a pat of butter on top.
- Serve, and enjoy!

- Let your beef come to room temperature by letting it sit out 30 minutes before grilling. This will give your beef an even temperature throughout.
- Pat down the seasoning to encrust the meat with it. This will ensure it sinks into the beef as it cooks and will give you the most flavor!
- Always check the temperature with a meat thermometer to reach your desired degree of doneness.

Grill beef short ribs over medium-high heat for 8 to 10, flipping halfway through. This cooks the beef to medium rare with a gorgeous sear.
Yes! You can freeze this beef chuck short ribs recipe.
Allow to cool, then store air-tight in a freezer-safe container, bag, wrap, or aluminum foil. Label with the freezing date. Frozen beef short ribs are good for about 3 months.
For best results, wrap in foil or freezer wrap first, then add to a bag or container.
Store leftover short ribs in the refrigerator for up to 4 days in a shallow, air-tight container, or tightly wrapped in plastic or aluminum foil.

- 6 boneless beef short ribs 2 lbs. total
- butter for melting on top, to taste
Sweet and Spicy Dry Rub
- 1 Tbsp. paprika
- ½ Tbsp. onion powder
- ½ Tbsp. garlic powder
- ¾ Tbsp. sea salt
- ¼ Tbsp. black pepper
- ½ Tbsp. crushed red pepper
- ½ Tbsp. brown sugar

Instructions
- Season 6 boneless beef short ribs with 4 Tbsp. sweet and spicy dry rub or mix 2 Tbsp. salt and 2 Tbsp. pepper to use as the seasoning. Pat the seasoning down to encrust the beef.
- Grill over medium-high heat for 10 minutes, flipping halfway through.

I must admit - I was a bit skeptical about grilling boneless beef short ribs. the only other experience I had with short ribs were bone-in and they took a long time to grill. the result was not a favorable one. with this recipe, they were more like a steak but better. grilled over medium heat directly over the coals for 8 mins and they were perfect! great charring when you season AFTER bringing to room temp is the key. great presentation, as well. thanks for this easy yet wonderful recipe. will be using again!
