Preheat oven to 400°F. Oil a baking dish. Halve the peppers and clean out the seeds. Rub oil on the inside of each pepper.

Place in baking dish and sprinkle with salt and pepper. Roast for 15 minutes. Remove from oven and set aside.

Heat a skillet over medium heat. Add oil and saute the onion until soft. Add ground beef and cook until no longer pink.

Stir in garlic and cook. Stir in the tomato sauce, cauliflower rice, Italian seasoning, salt and pepper. Sprinkle with red pepper flakes. Cook for 2 minutes.

Turn off heat and stir in half of the fontina cheese and parmesan. Spoon mixture into the par-baked peppers. Top with remaining fontina.

Lower oven temperature to 350°F and bake for 20 minutes. Serve and enjoy!
