Instructions

  • Prepare pulled pork by following my recipe, or use your favorite pulled pork, or store-bought.
2½ lbs Pork loin, 1½ cups BBQ sauce, 1 cup Beef broth, ½ cup Brown sugar, 1 Tablespoon Garlic powder, 1 Tablespoon Paprika, 1 teaspoon Onion powder, ½ teaspoon Black pepper
  • Preheat the oven to 400°F, and spread out a bag of tortilla chips evenly in an oven-safe skillet.
    1 bag Tortilla chips
  • Top the chips with 2 cups of pulled pork.
    2 cups Pulled pork
  • Cover the entire thing with 2 cups of your favorite shredded cheese.
    2 cups Shredded cheese
  • Place the entire pan in the oven and bake for 5-10 minutes until the cheese is melted and the chips are crisp.
  • Remove from the oven and add the rest of the ingredients, including the sliced jalapeno, diced avocado, corn, diced tomato, red onion, cilantro, and a squeeze of lime juice.
1 Jalapeno, 1 Avocado, ¼ cup Corn, 1 small Tomato, 1 Lime, ¼ cup Red onion, Cilantro
  • Top with a drizzle of sour cream or Mexican crema, and serve!
    ⅓ cup Sour cream

Notes

  • You can use flavored chips if you'd like! I've found that hint of lime chips can be delicious, or for extra zest, chips with jalapeno!
  • This recipe uses BBQ pulled pork, but you can use any pulled pork recipe you like! I highly recommend smoked pulled pork, or grilled pork butt- recipes linked below!
  • There's no wrong way to make nachos, so alter the toppings according to your taste. Just avoid adding the salsa early, as it can make the chips floppy.
  • I like using Monterey Jack or Cheddar shredded cheese, but it would also be delicious with cojita or queso fresco!
