Pork Roast Gravy
The secret to a good roast is always in the gravy! It's the key for every sort of pork, whether you're making a roast, chops, tenderloin, or medallions. A good gravy isn't just for the meat, either! This easy pork gravy has so much flavor, you'll be pouring it on everything.
And if you've ever had gravy with the drippings, you'll know it makes all the difference! Next time you're roasting pork, make sure it's on a baking dish or plate where you can catch every drop, because pork drippings are loaded with flavor. Tip it into the gravy pot, and you'll be amazed!

Pork Gravy Ingredients
- Pork roast drippings
- Butter
- Chicken broth
- Cornstarch
- Water
- Worcestershire sauce
- Salt and pepper
How to Make Pork Gravy
- Melt the butter in a large skillet over medium heat.
- Once melted, pour in the pork drippings and mix well until combined.
- Pour in the chicken broth, Worcestershire sauce, and water, then mix again.
- Make a slurry of a few teaspoons of cold water and the cornstarch, then very slowly, while stirring, pour the cornstarch slurry into the gravy. It can also be added dry in small portions.
- Bring the gravy up to a simmer as you continue stirring so the cornstarch doesn't clump.
- After about 5 minutes or when the gravy is at the desired thickness, remove from the heat and pour into a gravy boat.
- Serve on anything from pork and potatoes to biscuits and toast!
Gravy for Pork Roast Recipe Tips
- This pork gravy recipe is amazing with mushrooms or onions! Just saute sliced onions or mushrooms and add them to the gravy before it simmers for an incredible pork and mushroom gravy or an onion gravy worth craving.
- Low on cornstarch? A roux made of equal parts butter and flour will work out great as well (though it will no longer be gluten-free).
- If you have leftover pork rub from seasoning the pork, try adding it to the gravy for extra boosted flavor!
- While not make-ahead friendly due to needing pork drippings, this recipe stores very well in the fridge and any spare can easily be frozen for later!

Pork gravy is typically made of butter, broth (I prefer chicken broth), a thickener like flour or cornstarch, and Worcestershire sauce. When available, pork drippings take any gravy from good to showstopping!
The pork rub you use for the pork roast will have a huge influence on the flavor and zest of the gravy! Using a good rub, like my favorite pork rub recipe, will add so much flavor to the drippings. Additionally, red pepper flakes and pepper will add some delicious bite.
Gravy comes down to two major factors: thickness and flavor. Thickness comes from using a roux or corn starch to thicken the gravy as it cooks, and flavor is best enhanced with using pork drippings alongside the broth!
This recipe is specifically for gravy with drippings, but if you're in a pinch, a pork gravy from broth! The answer is in onions. Saute a chopped onion in plenty of butter and add in the same seasonings that you would add to the pork, like paprika, thyme, garlic, salt and pepper. Add extra broth, and you'll have a delicious onion gravy to go with any pork dish!

Pork Gravy with Drippings

- Pork drippings from roast or chops
- 2 Tablespoons Butter
- 1 cup Chicken broth
- 3 Tablespoons Cornstarch
- ¼ cup Water
- 2 Tablespoons Worcestershire sauce
- Salt and Pepper to taste

Instructions
- Melt the butter in a large skillet over medium heat.2 Tablespoons Butter

- Add a splash of water to the cornstarch to make it into a slurry and pour it slowly into the gravy, mixing the entire time. You can also add it dry in small amounts while mixing.3 Tablespoons Cornstarch

- Cook until the gravy is thickened, about 5 minutes, then remove from the heat, pour into a gravy boat.
- Serve on everything from potatoes to pork to your favorite bread rolls!
