Sausage Breakfast Casserole
When my kids were growing up, every day was a busy, non-stop day. By the weekend, I was almost always exhausted; and when you're tired after a long week, making a hearty breakfast isn't exactly the easiest thing to do. Even just a simple plate of bacon and eggs feels like too much effort.
My solution was to start making breakfast the night before to save myself time and energy over the weekend. This breakfast casserole with sausage is a total lifesaver: you can make it Friday night, and have enough servings for the whole family on Saturday and Sunday.
Or, serve it up over the holidays for brunch, and trust me, everyone will ask you for your recipe. Each bite is bursting with flavor, so it's the perfect way to start your day off right. With minimal effort and maximum flavor, my breakfast sausage bake is sure to become a staple in your breakfast rotation for the holidays and weekends!
Sausage Egg and Cheese Casserole Ingredients
- breakfast sausage
- crescent rolls
- eggs
- heavy whipping cream
- salt
- pepper
- onion powder
- paprika
- Colby Jack cheese
- mozzarella cheese
- green onions
Easy Sausage Casserole Instructions
- Preheat oven to 375°F and grease a 9 by 13-inch baking dish.
- In a large skillet over medium-high heat, brown sausage for about 6-8 minutes. Break it up into smaller pieces as it cooks. Once browned, remove it from the heat and drain off any excess grease. Set the sausage aside.
- In a large mixing bowl, whisk together eggs, heavy cream, salt, pepper, onion powder, and paprika. Add the cheese to the mixture and stir everything together until well combined. Set the bowl aside.
- Open the package of crescent rolls and roll them according to the packaging. Then, take the prepared baking dish and arrange 15 of the rolls in three rows, with 5 rolls in each row. You want to form a crust along the bottom of the baking dish.
- Spread the cooked sausage evenly over the crescent rolls in the baking dish.
- Next, pour the egg mixture evenly over the top.
- Bake for 25 minutes, then carefully remove from the oven. Let it sit for 5 minutes before sprinkling green onions on top (optional). Serve while the dish is still warm.
Make Ahead Breakfast Casserole
You can easily make this breakfast casserole up to 24 hours ahead of time. Prepare as directed, but do not bake. Cover and store, unbaked, in the refrigerator overnight. The next morning, bake according to the instructions, serve, and enjoy!

Freezer Breakfast Casserole
To freeze this breakfast casserole, make sure to use a freezer-safe baking dish. Prepare as instructed, but do not bake it. Cover tightly with foil and freeze for 2-3 months. Allow it to thaw overnight in the refrigerator, then bake as instructed.
Storing Leftover Breakfast Casserole
After cooking, allow the casserole to cool, then cover so the dish is airtight and store in the refrigerator for 4-5 days. Reheat in the microwave in 30 second intervals until heated through or, if reheating a larger portion, reheat in the stove at a low heat.

Although I recommend preparing it the next day, a breakfast casserole recipe with sausage will last for up to 3 days unbaked in the refrigerator. Keep it tightly wrapped in foil before baking.
Breakfast casserole reheats very well, whether you wish to reheat it using the microwave or the oven. Microwave in 30 second intervals so you don't overdo it and dry out the eggs; or, reheat gently in the oven wrapped in foil. You can even reheat it on the stove over a gentle heat, if you prefer. I like to place a lid over the pan to keep it from drying out and to heat it through more quickly.

- 6 large eggs
- 1 cup heavy whipping cream
- ½ teaspoon salt

- 1 cup colby jack cheese shredded
- 1 cup mozzarella shredded
- 1 to 2 green onions thinly sliced, optional
