    Cooking Wagyu Steak

    The first time I tried wagyu steak was on a business trip out of state at a steakhouse, and I still think about it constantly. If you've ever had that steak, you know exactly what I mean when I say that I daydream about going back.

    I knew as soon as I got home from that trip, I had to start planning on my own wagyu steak recipe. How could that incredible beefy flavor and buttery texture be recreated at home?

    That's when I came up with this recipe - and how I put together my guide on how to cook wagyu steak. After plenty of experimenting, I can tell you this is the wagyu steak recipe you're going to want to try!

    Cooked to perfection and topped off with black truffle butter, this is the pinnacle of all steak recipes. Once you try it, you're going to dream about it - trust me. And after you try this method, I also recommend smoking wagyu - it's delicious.

    What is wagyu?

    Wagyu is, specifically, beef that comes from a breed of Japanese cattle. These cows are raised with a high standard of care, and produce beef with exceptional marbling (the lines of fat running through the steak). This high fat content makes wagyu steak particularly tender and buttery.

    Wagyu Steak Recipe Ingredients

    • Japanese wagyu steak
    • Truffle butter - high-quality butter, truffle pate
    • Coarse salt

    For best results, use a flaky sea salt like Maldon salt. Don't use table salt for this wagyu steak recipe... trust me!

    Use a high-quality butter, too. It makes all the difference.

    Finally, I highly recommend Japanese wagyu and not American wagyu. They are not the same. However, if you can only get your hands on American wagyu, this recipe will work for both.

    How to Cook Wagyu Steak

    1. Heat a cast iron pan over high heat.
    2. Salt both sides of the steak generously. Give it a nice layer on each side.
    3. Melt truffle butter in the pan. Allow it to fully melt.
    4. Once the butter melts, add the steak to the cast iron skillet. Cook wagyu beef on both sides 3-5 minutes, or until the internal temperature reaches 125°F on a meat thermometer for rare or 135°F for medium-rare.
    5. Remove and let rest at least 10 minutes before slicing to lock in the juices. Serve, slice, and top with additional truffle butter. Enjoy!

    Tips to Cook Wagyu Steak

    • Use my beef temperature chart to find your preferred degree of doneness.
    • If you have the time and prefer to do so, salt the steak 30 minutes and let it rest at room temperature before you plan on cooking. This further enhances the flavor by allowing the salt to soak into the steak.
    • If you don't want to use truffle butter, use oil instead.
    • Simple coarse salt and black pepper is all you need to make this steak taste incredible - but I personally love topping it with truffle butter.
    • Fresh rosemary and thyme are great additions to this steak recipe as well. Use fresh herbs, not dried, to season steak.
    • Japanese wagyu beef can be a bit harder to find than American wagyu steaks, but it's worth the effort.
    • This recipe feeds about 2 people.

    Cooking Wagyu Steak FAQ

    Do you cook wagyu with butter or oil?

    You can use either butter or oil to cook wagyu steak - both work equally well. Because wagyu cooks quickly at 3-5 minutes on each side at high heat, you don't have to worry about the butter burning.

    How should a Wagyu steak be cooked?

    Wagyu steak is best cooked over high heat in a pan, and quickly. This method allows for a beautiful sear on both sides of the steak while cooking to a perfect internal temperature of rare to medium-rare.
